In Sumatra, traditional methods of coffee production are still alive. The beans are soaked in water and allowed to ferment after picking, lowering the acid content and yielding a full-bodied flavor and earthy aftertaste. Some farms even use elephants to transport their crops to the coffee mills!
This coffee is really full-flavored and almost syrupy, with a lot of earthy depth.
